Finca Valldosera Cava Subirat Parent Brut Nature 2011

Cava reserva Brut Nature mono variety produced with Subirat Parent grape. Unique, surprising and exceptional.Nurtured for more than 24 months, it has an intense orangey yellow colour, very rich in aroma, floral hints, ripe fruit, apricot and toasted.Very full in the mouth, with very fine and pleasant small bubbles, dry in the mouth , perfect balance and very persistent.

Vine growing

This cava comes from three different plots. A total of 1.5 hectares with low production, 4.000 kg/hectare. The soil is mainly clayey-calcareous.

Winemaking
The grape harvest was excellent. A hot and humid summer. Rainfall at the end of August. September was very sunny and cool temperatures.

The grape was macerated for 12 hours, for a better extraction of the delicate aromas. Afterwards, the grape was pressed. The alcoholic fermentation was produced for 15-18 days in stainless steel vats at 16°C. Afterwards the baling out was done, followed by the second fermentation and minimum nurturing in the bottle of 24 months. The disgorging was the last phase of the process.No liqueur is added.
